If you manage to slip into a security officer disguise as an assistant, would you have to follow space law?

Under space law, citizen arrests can be made, but only normally for when the chain of command has collapsed, no security or there is a murder or crime in front of you. At most a citizens arrest usually just results in the person being demoted. In the case of dressing up completely as a security officer and acting the part out, people being brigged will see you as an actual security officer. With the power of being looked at as a security officer as well as actually brigging them comes the responcibility of space law.

You're supposed to always follow Space Law, by the way. Unless you're some kind of syndicate scum, a traitor, or just a douche bag.

You have to follow Space Law as an ordinary Civilian, that is, unless you like getting arrested by redshirts
Sounds more like Wings is referring to being Space Law(Or, atleast an Officer of it)
