A serious barman inevitably ends up with a stack of like 15 bottles and containers on one of his precious, precious tabletops, through which he must dig for the specific ingredient he needs.
My idea is to give the barman an ID-locking "liquor cabinet," or alternatively "booze fridge," that behaves like the Chef's smart fridge: allowing him to dispense bottles of specific stuff on demand, but also letting him load them back in when he's done. The bottles still originally come from the booze-o-mat, but instead of stacking them on a table the barman can stow them in the liquor cabinet, which neatly displays its contents in a popup just like the smart fridge does. Optionally, the liquor cabinet could list the amount in each bottle as well, so the barman can tell at a glance when it's time to vend a new bottle from the booze-o-mat.
This would both reduce clutter in the bar and also make the barman's job a lot less frustrating. It would also reduce lag by eliminating the need for the poor barman to right-click a stack of 20 objects to look for what he wants.

I like this idea. Though what about something similar to what the chemists have in which he can simply dispense liquor into a cup? The only 'issue' would be lack of bottles if someone required one but I think this would work too.

Yeah, I considered a liquor mixing/vending machine, but I felt like eliminating the bottles would take away an essential part of the job.
Edit: To clarify, the shaker and bottles are what make the bartender swanky. Without those he's just the booze chemist.
